With only 1g net carbs in each cookie, these keto snowball cookies are the perfect addition to Christmas cookie platters. They are sweet, delicious, and have the same texture as traditional snowball cookies!
These little cookies have the perfect name. They look just like crumbly snowballs, and they are so much fun to eat! As you bite into them, the powdered sugar substitute sticks to your lips and falls to the plate.
Snowball cookies are one of America’s favorite Christmas cookies. They appear in almost every cookie spread you’ll find. Classic snowball cookies are buttery almond flavor bites of pure bliss!
It’s pretty easy to convert this to a low-carb recipe. The original recipe is made with all-purpose flour and coated in powdered sugar. Change those two things, and you have a cookie that you can eat, even when you are on the keto diet.
Another fantastic thing about these cookies is how easy they are to make! If you have ever made cookies before, then you’ll think these are a cinch. The most fun part is rolling the baked cookies in the powdered sugar substitute.
Keto Snowball Cookies
- 2 cups Almond flour
- ½ cup Butter unsalted and softened
- ⅓ cup Swerve confectioner sugar substitute
- 1 teaspoon Vanilla extract
- ⅔ cup Chopped pecans
- pinch of salt
- ½ cup Swerve confectioners sugar substitute for coating the cookies once baked
Add the butter and ⅓ cup sugar substitute to a mixing bowl and beat until creamy and smooth.
Add in the almond flour, salt and vanilla extract. Mix until well combined.
Fold in the pecans.
Roll the dough into 24 evenly sized balls, and freeze for 30 minutes.
Preheat the oven to 350 degrees and bake for 10-12 minutes until the bottoms are browned.
Let cool for several minutes and then roll in the remaining sugar substitute while still warm.
Use a cookie scoop to make sure each cookie is the same size.
Wait until the cookies are completely cooled off before you roll them around in the Swerve confectioner’s sugar substitute coating.
